
STARCH… AN INCONVENIENT TRUTH? My life-partner is an insulin dependent Diabetic. Since the day her Diabetes was diagnosed, in 1995, she has been very brittle. At first, her blood sugar numbers would swing from the low 20s to over 500. She went into ketoacidosis three times in her first fourteen months as a Diabetic. She could not achieve any semblance of blood sugar control until she eliminated all grains and starch from her diet. In 2002, she and I followed our Doctor’s advice and significantly eliminated foods high in sugar (starch) from our diet. She and I lost over 100 lbs. each and are much healthier. Since we check her blood sugar when we eat, we get to see what starchy foods like bread, pasta, rice, corn, cereal, soy as well the sugars in dairy and fruit do to her blood glucose level, and how much insulin it takes to process it! The reality is staggering! It’s identical to sucrose table sugar! I’m not a Diabetic, but the starchy foods require just as much insulin for me, luckily, I make my own. Most people don’t know that insulin is the hormone that tells the body to store fat. The more sugar and starchy foods a person eats, the more insulin it requires to metabolize the starch and sugar into energy or fat. Eating too much starch and sugar means too much insulin is required, which means insulin producing cells in the pancreas start to fail which can lead to pre-diabetes or worse.
